  1. Peanut Butter & Cinnamon Loaf

    Yesterday I did some Sunday baking!

    This is a moist loaf that is similar to Banana Bread in texture minus the fruit
    Delicious with either almond or peanut butter spread on top, or on its own.

    Mix everything in a blender:

    1 Glass of Almond Milk
    3 Eggs
    1 cup of coconut flour
    2 tablespoons of Golden Flaxseeds
    1 tablespoon of cinnamon
    1 tablespoon of honey
    2 tablespoons of peanut butter
    1 teaspoon of baking powder

    Add coconut milk (hemp, almond or other milk of your choice) until a
    a thick consistency, but still easy enough to stir with a wooden spoon

    Pour into a greased container and place in the oven at 180c, for 30minutes.
    Pierce with a wooden toothpick to check it is cooked through.

  2. Easter Pizza

    I recently made the most delicious pizza I have EVER had! Here's the recipe so you can make your own over Easter.

    1 small cup of chickpea flour

    1 small cup of water

    ½ teaspoon of cumin

    1 garlic clove

    ½ an onion

    Small bunch of fresh parsley & coriander

    Soften the onion, garlic and cumin with a little coconut oil until it starts browning.

    In a bowl mix the water with the chickpea flour. Add the cooked onions and the chopped fresh herbs.

    Salt to taste.

    In a non stick frying pan add a tiny bit of coconut oil and when hot pour some of the mixture to form a pancake. Cook both sides until a bit brown. Place is a baking tray and add whatever toppings you fancy. Place under the grill for a few minutes and drizzle with olive oil before serving.

  3. My Great Grandmothers Cough Carrot Recipe

    Here's a cough carrot recipe from my great grandmother, my mum used to make it during the winter months whenever we had a cough. It’s a very safe remedy for children and the whole family and totally delicious.

    Thinly slice an organic carrot into a ceramic bowl.
    Sprinkle organic unrefined brown sugar over the carrots until they are lightly but completely covered.
    Cover and leave over night (not in the fridge).
    The next day you have a delicious light cough syrup.
    Take a dessert spoon 3 times a day.
